Easter Weekend | 2016

We had a pretty chill Easter weekend.  I decided to forgo an egg hunt and Zane was the only one of my kids who mentioned missing it (after the fact).  Maybe they're getting too old or they're just being patient with my laziness???  We did dye eggs this year, which we skipped last year. Sooooo...#winning? 


Word to the wise – DO NOT ever buy the dip dyed egg kit.  Nightmare!!!  All the colors mix and overflow and drip weird.  It was stressing us all out.  Especially Brenner.




Easter morning baskets were a success.  I couldn't help myself and ended up putting together a basket for my baby girl, too.  Complete with the softest stuffed lamb in all the land. 




I tried to get a picture of everyone looking dapper before church and was less than successful at getting everyone to look at me.


We had our friends, the Rodriguezs, over for Easter dinner.  It's one of my favorite things to set the table and make things festive for holidays.  I got some help from the hubby and kids, hence the fork and spoon on the wrong side :)

Honey-orange glazed ham with béarnaise.

Potatoes au gratin with gruyère and thyme. 

Homemade rolls with whipped vanilla bean honey butter.

Spring salad with strawberries, pecans, feta, and champagne vinaigrette.

Roasted asparagus.

Strawberry shortcake with basil infused whip cream.  







I'm so grateful for my Savior, his life and resurrection, and all the hope that that brings.

It's a girl.


Over the years of my adult life I've had dreams of having a little girl.  I've seen her.  I've had friends and family tell me of dreams they've had about me having a girl.  I've cried because those dreams never became real. I've stayed awake at night daydreaming of the things we'd do and who she might be if she ever was real. 

Rewind life to the week before Indy was born.  One night I was relaxing on the couch, about to pop, and feeling the exhaustion of pregnancy "doneness" when my mom called...

Now, I must insert and tell you some things about my mom if you don't already know her.  First, she's amazing.  Wise and reserved.  Musical and mathematical.  Intuitive and spiritually in-tune.  She's also not pushy or opinionated.  She has always just let me do my thing and has been there to help when I need her.  She's not exactly the kind of mom to call me up and tell me what she thinks I should do in life.  Not unless she has good reason. 

Back to the story.  I was laying there that Sunday evening when my mom called.  She asked how I was feeling and then got kind of quiet before she struggled out the question: "So I know you're due any day, and I wondered if you are planning to do something permanent, like getting your tubes tied?" – At that point I hadn't signed on the dotted line, but was thinking four kids was enough and I'd maybe just get my tubes tied after I had Indy. – After telling her this, she was kind of quiet and then said these words, which I will never forget... "Well Lela, I think you're going to have another baby, and I'm pretty sure it's going to be a girl." 

You guys, those were her exact words, to a pregnant woman about to give birth!  I know because they are burned into my memory;  because I felt that familiar feeling of the spirit testifying of truth.  You know, the warmth in your heart, the goosebumps running up your arms, the peace in your soul that everything is okay.  I immediately started drilling her about why she thought this and asked, "Well, did an angel come down and tell you,  Mom?!?" – "Did you hear a voice?!?" – "How could you know this?!?!"  She didn't give me much information, other than she had an experience that day and she knew she was supposed to tell me.  I have pondered over that conversation for four years.  I've called her and asked her about it, told friends about it, I've prayed and prayed about it, and I just couldn't shake that feeling that I had when she first said those words to me.  It was a message.  It had to be. 

And in hindsight, glorious hindsight, I know that God knew that a message from my mother was the only way to get through to me.  I am stubborn you see; but I trust my mom, and He knows that.  I have been so emotional (just ask Sean) through all of this.  Having one more kid is scary.  Five kids is a whole lotta kids.  I was so nervous; not that I would have another BOY, but that I would never have a GIRL and that all those experiences and those feelings wouldn't have been real.  

On the day we found out I was a wreck.  I woke up at 2:00 am.  Went through every scenario in my head.  I tried to convince myself that I could be okay if we were having a boy (knowing I'd be heartbroken).  I just kept repeating my mom's words in my head and I knew it.  They were true.  They had to be. 

And they are. They're true. I'm going to have another baby...and it's going to be a girl. 

God is good.




It's painful for me to share these pics of me ugly crying, but Sean insists that they're epic and capture the moment.

Brenner was by far the most emotional of my boys.

Indy was sad because the balloons flew away.

Chopped Thai Chicken Salad with Spicy Peanut & Lime Dressing



Chopped Thai Chicken Salad with Spicy Peanut & Lime Dressing

Ingredients

Salad 

1/2 head of red cabbage. Chopped.
1/2 cup chopped green onion.
1 cup shredded carrot. 
1 cup sliced peppers {I used sweet mini peppers}. 
1 cup sliced cucumber.
1 cup chopped peanuts.
1/4 cup chopped cilantro. 
1 or 2 sliced grilled chicken breast. 

 Spicy Peanut & Lime Dressing 

2 limes. Juiced.
1 tablespoon rice wine vinegar.
1 teaspoon sesame oil.
1/4 cup soy sauce
1/4 cup creamy natural peanut butter.
1/4 cup water.
1/4 cup olive oil.
1 teaspoon red pepper flakes
1/2 teaspoon each of salt & pepper.

*Blend dressing ingredients with emulsion blender (or a counter top blender) until smooth. Use immediately or refrigerate.

LelaLove in Seattle

I just got home from a lovely week visiting my friend, Lizzy Lou, in Seattle.  Since she moved up there last fall, we've been dying to see each other – and while she's been busy with a newborn and moving, I've been busy recovering from knee surgeries.  Luckily, Sean took some time off this month and let me sneak away for a little trip to go see her.  Turns out we both have great husbands, because every night I was there, her hubby held down the homestead so we could hit the town for dinner. 

We hung out with the kids during the day.  Taking them to Pike Place Market, Snoqualmie Falls, and Pine Lake to meet up with the kid's cousins at a dreamy lakeside park {big trees, huge fields of green grass, and a clean lake with ducks and a boat dock}.  I also spent plenty of time laying in the sunshine in her living room.  You know, like a cat?  I haven't been to Seattle since we lived there almost 12 years ago, so it was nice to see all the familiar places.  We hit several good restaurants, including Din Tai Fung and DERU Market.  We hit some great food spots in Pike Place Market as well.  We're certified food lovers – so, it's always a good time when we're together. 
I just have this thing with flowers.  Gimme all the flowers!!!

Classic.  William is calmly observing and Fritz is jumping. 
I wanted everything and I especially wanted to figure out a way to get everything home with me.  From Beecher's cheese, to fresh produce and seafood, to Le Panier baked goods.  That place really is the best.  Oh, how I miss it!












The falls were beautiful and the drive up was equally beautiful.  All over the PNW the trees are green and blooming for Spring.  Meanwhile, my grass is all dead back home.  Dang drought.
